Celebrity Food Critic Opens Pho Restaurant

Food critics don’t always get it right, but Chua Lam does. Not only is he an acclaimed Chinese food critic, he’s also a movie producer, columnist, and a judge on Japan’s Iron Chef. And now, he’s a restaurateur.

Chua’s career has taken him all over the world. But it was in Australia that he found his favourite dish. It’s a humble bowl of soup and noodles from Melbourne’s Pho Dung. For Chua, it’s the greatest pho in the world. In fact, he was so impressed by their pho, that Chua has sang its praises over 33 times throughout his career, and now, he’s brought the recipe to Hong Kong with his newest venture: Chua Lam’s Pho.

Before opening his new shop, Chua went back to Melbourne and learned the secrets of their famous noodle soup. What makes the perfect pho? Noodles and broth, obviously. It sounds simple but finding the perfect balance of flavours and textures is a tricky—and nobody likes gloopy noodles or tasteless broth.

To get the ideal combination, Chua Lam’s Pho uses Vietnamese broken rice and a custom-made noodle machine to make super fresh noodles daily. And for the broth, they start with over 50KG of Australian beef, and cook it down for hours to get their base. Then, they combine it with a secret balance of fish sauce and spices to get that unique flavour Chua loves so much.

If you’re not in the mood for soup, they have a host of other traditional Vietnamese dishes and drinks. Personally, we can’t wait to try the fried spring rolls and Vietnamese coffee – nothing gets your energy levels up like condensed milk and strong caffeine.

A lot of pho spots in Hong Kong are small and you’re squeezed for space. But this chic restaurant has plenty of room. Japanese schemata architect Jo Nagasaka designed the two-storey space using natural light and soft wood to create an atmosphere of tranquillity.
